Iceberg Lettuce

Iceberg lettuce, originally known as crisphead lettuce, is a variety of lettuce that is widely consumed across the world. It is characterized by tightly furled, crunchy leaves and a mild, sometimes watery flavor.

Care and Handling

Ideal Storage Temperature: 34° – 36°F. 90-95% relative humidity. Store lettuce away from cooler fan units to minimize rapid dehydration. Store away from ethylene-producing fruits to minimize spotting. To store unwrapped lettuce, rinse lightly, drain thoroughly, and refrigerate in tightly closed plastic bag or container. Refrigerate field-wrapped lettuce in its original wrapper. First in/first out rotation.

Tips

  • Iceberg lettuce should be springy & firm with compact heads, light green color, crisp texture and delicate flavor. Leaves should be an even green, with little browning.
  • Contrary to popular belief, it is not always best to get the firmest head of lettuce. The best tasting lettuce will not be rock solid. If you buy the firmest head, you will get more lettuce for your money, but it may not have the best possible flavor.
