Parsley, Italian

Parsley is a Mediterranean herb that belongs to the carrot family, is popular in northern Europe, and came belatedly to North America in the Nineteenth Century.

Of the over 30 varieties, the most common are flat leaf (also known as Italian Parsley) and curly leaf. Of the two, Italian Parsley has a richer, more satisfying flavor and is more typically used in cooking.

Care and Handling

Ideal Storage Temperature: 33°F. 95-100% relative humidity. High humidity is essential to prevent desiccation. Using top ice is often beneficial.

Tips

  • Choose bright green leaves that show no sign of wilting.
  • The leaves are most commonly used, however the stalks are good for adding flavor to stocks.
  • You can freeze parsley! Just clean, chop and let dry; then put in ziplock bags and seal.
